Red wine sundae

Vanilla ice cream on red wine syrup, with orange zest and caramel. Grown-up, but still a sundae.
Preparation 5 min, reducing 20 min, total 25 min. Serves 2.
Why it works
Red wine and orange bring bitterness and acidity. Suboro Vanilla softens everything again.
What you need:
250 ml red wine
50 g sugar
1 strip of orange peel, plus extra zest to finish
2 large scoops of vanilla ice cream
2 tbsp Suboro Vanilla
Method:
Simmer the wine with the sugar and orange peel over medium heat for 15–20 minutes, until reduced to a syrup (approximately 80 ml).
Remove the peel and leave the syrup to cool.
Pour the syrup into a bowl or glass.
Place a scoop of ice cream in the centre.
Grate fresh orange zest over the top and finish with Suboro Vanilla.
Our tip: serve with a glass of the same wine you used to make the syrup.
