A stack of pancakes, cold butter and caramel running down the sides.

A real showstopper.

Preparation 10 min, cooking 15 min, total 25 min. Serves 2 (6 pancakes).

Why it works

Who doesn’t love this combination? Add different fruit for contrast and freshness.

What you need:

  • 150 g flour

  • 1 tbsp sugar

  • 2 tsp baking powder

  • A pinch of salt

  • 1 egg

  • 180 ml milk

  • 30 g melted butter, plus extra butter for frying

  • Cold butter or whipped butter, to serve

  • A handful of blueberries

  • Suboro Sea Salt

Method:

  1. Combine the flour, sugar, baking powder and salt.

  2. Whisk the egg with the milk and melted butter, then stir into the dry ingredients. A few lumps are fine.

  3. Cook the pancakes in a lightly buttered pan over medium heat for 1–2 minutes per side. Flip them once bubbles appear on the surface.

  4. Stack them while still warm on a plate and top with butter and blueberries.

  5. Drizzle with Suboro Sea Salt just before serving.

Our tip: stack them high, keep the butter cold and let the caramel run down the sides.
