Poached pear with vanilla and caramel

A whole pear, a scoop of ice cream and plenty of caramel. It looks elegant, and all you need is a saucepan.
Preparation 10 min, poaching 30 min, total 40 min. Serves 4.
Why it works
A poached pear is soft, juicy and delicately sweet, with vanilla and a hint of cinnamon. Cold ice cream and caramel turn it into a complete dessert. It’s also easy to prepare, as the pears can be poached in advance.
What you need:
4 firm pears (such as Conference pears)
750 ml water
100 g sugar
1 vanilla pod, or 1 tsp vanilla extract
1 strip of lemon peel
1 cinnamon stick
4 scoops of vanilla ice cream
4 tbsp Suboro Vanilla
Our tip: leave the stem on the pear. It looks much more elegant on the plate.
Method:
Peel the pears, leaving the stems intact. Slice a small piece off the bottom of each pear so they can stand upright.
Add the water, sugar, vanilla pod (split and seeds scraped out), lemon peel and cinnamon stick to a saucepan and bring to the boil.
Reduce the heat and add the pears. Simmer gently for 25–30 minutes, until a knife slides in easily.
Remove the pears from the syrup and leave to cool slightly. They can be served warm or cold.
Place a pear in a bowl.
Add a scoop of vanilla ice cream alongside it and finish with Suboro Vanilla.
