Bacon caramel sundae

Vanilla ice cream, crispy bacon and a generous layer of caramel.

Sweet, salty and a little unexpected, which is exactly why it works.

Preparation 5 min, baking 15 min, total 20 min. Serves 1.

Why it works

Bacon is salty, smoky and crispy, exactly what sweet caramel and cold ice cream need. You get sweetness, saltiness and creaminess in a single bite — a bit like salted caramel, but with more character.

What you need:

  • 3 slices of streaky bacon

  • 3 scoops of vanilla ice cream

  • 3 tbsp Suboro Vanilla or Suboro Sea Salt

  • Optional: a cocktail cherry

Our tip: cook the bacon until extra crispy. Soft bacon and ice cream are not a good combination.

Method:

  1. Preheat the oven to 200°C and place the bacon on a baking tray lined with baking paper.

  2. Bake for 12–15 minutes, until golden brown and crispy. Drain on kitchen paper and leave to cool briefly.

  3. Finely chop one slice into small pieces. Keep the other two slices whole.

  4. In a tall glass, alternate layers of caramel and ice cream.

  5. Sprinkle the chopped bacon over the top and add a little extra caramel.

  6. Stand the two whole bacon slices upright in the ice cream and add a cherry, if desired.

  7. Eat immediately, before the ice cream melts.
